Pica pollo is everywhere in the Dominican Republic, but there is more behind it than just fried chicken. These neighborhood restaurants became closely associated with Chinese-Dominican families and today are part of everyday food culture across the country. There is even a local joke that if there isn’t a Chinese person behind the counter, you have to wonder if it’s a real pica pollo!

Here, you won’t be eating a tourist version of the dish. We’ll sit where locals stop for a quick meal and share freshly fried chicken while the neighborhood carries on around us.

It is simple, crunchy, salty, satisfying—and the perfect way to start eating your way through Santo Domingo after dark.

Now we get serious about late-night hunger. At Patricio Chimi, we’ll try two very different Dominican favorites in the same stop.

First comes pierna en plato: roasted pork sliced and served under a mountain of fresh vegetables and sauces. The combination of warm, flavorful pork, crunchy vegetables, and creamy sauces makes this one of those dishes that looks simple until you take the first bite.

Then we move to yaroa—one of the cheesiest, messiest, most satisfying foods of the night. Layers of fries or sweet plantain are covered with seasoned meat, sauces, and plenty of melted cheese.

These are not dishes created for tourists. The kind of rich, comforting foods people look for after work, after going out, or when the night simply calls for something good.

We finish the night with one of the true classics of Dominican street food: the chimi.

You’ll see it prepared right on the grill before eating it fresh and hot. Seasoned meat, cabbage, tomatoes, bread, and sauces come together into something that visitors often call a Dominican hamburger—but once you taste one, you’ll understand why locals consider the chimi its own thing.

Part of the experience is the place itself. This is a neighborhood food stop, with people ordering around you, the grill working nonstop, and the casual atmosphere that makes eating a chimi at night completely different from ordering a burger in a restaurant.
