One more thing that is unique to the island of Flores is Lontar and Sugar Palm Wine, known to local as Moke or Tuak, a type of alcoholic drink made from the fruit or flowers of the Lontar or Sugar palm tree. All over the island of Flores, moke drinks have many names such as Moke, Tuak, Sopi and Dewe, but the most familiar name is Moke. Moke is not just a drink but has very high cultural, economic and social values. Moke is a symbol of customs, a symbol of friendship and association for the people of Flores.
Moke is made traditionally and is a legacy that must be passed on to posterity. This is generally done in community gardens using traditional containers such as earthen pots and specially assembled bamboo stalks to distill them. Moke making requires patience and special skills. There are various types of moke; ranging from regular moke, red moke to moke with the highest alcohol content which is very hard. Especially for moke with a high alcohol content, people usually refer to it as "BM" or burning.
Although moke is an alcoholic drink, it is very easy to get it, available in various corners of the city along the island and in remote villages. Apart from ordinary moke/ plain moke, there are people who like to add traditional ingredients to moke bottles or containers such as ginseng, fawn (baby deer), roots and pariah fruit for soaking. The effect is not for hangovers but to add a fresh taste, increase vitality and for health.
In Flores you will not find negative cases due to moke. The taste is strong and smells good, making moke the most delicious drink in various events such as family gatherings, wedding parties, and so on. The joy of moke lies not in taste alone, but how to drink it, with whom, where, and with what you drink it - that's the secret key to enjoying moke as the most enjoyable drink.
Who do you drink with? Moke will taste good if you drink it together (sitting in a circle). Here you will enjoy moke with a full sense of kinship, a sense of brotherhood, typical Flores people hospitality, chatting with honesty and of course with their own distinctive humor. Familiarity will keep you from going out of the circle.
Wherever you drink, moke will not be delicious if it is drunk in a house, room or building. You will feel the sensation of drinking moke when you are with other people outside the room such as under a shady tree, on the beach or in the yard, of course while sitting in a circle.
What do you drink moke with. You won't feel the pleasure of a moke without a booster or snack, or what the Maumere people call it 'lepeng'. And the most distinctive and delicious plates are the Fish Shoup, Grilled Fish, Goat Soto, Grilled Banana and Tomato Sambal.
Fresh fish soup, for example, will be felt when it goes into the throat, then followed by a shot of moke that will feel warm in the body and covered with roasted banana dipped in tomato sambal, you will sweat, delicious...
