- We’ll meet in front of the famous “Kin-Dokei” or the big golden clock. If you’re unsure where that is, just ask a station attendant or nearby shop staff and you’ll find it in no time. After we have met, start heading to the soba which will take about an hour to get there.

Kawara Soba – A Tasty Local Dish Served on a Roof Tile!
Kawara Soba is a unique and delicious dish from Yamaguchi Prefecture, especially popular in the area of Shimonoseki. What makes it special is that it’s served on a heated roof tile (called kawara in Japanese)!
Green tea soba noodles are grilled directly on the hot tile, giving them a crispy texture on the bottom while staying soft and flavorful on top. The noodles are topped with tasty ingredients like thinly sliced beef, shredded egg, seaweed, green onions, and lemon with grated daikon radish.
The combination of the crispy and soft noodles, the fresh toppings, and the dipping sauce (tsuyu) creates a truly unique experience — both visually and in taste.
