Kakukyu Hatcho Miso – A Taste of Tradition Since the Samurai Era
Located near Okazaki Castle, Kakukyu is a historic miso brewery that has been producing Hatcho Miso for over 380 years. This rich, dark miso is known for its deep umami flavor and was once favored by the samurai, including Tokugawa Ieyasu.
At the Kakukyu facility, visitors can take a guided tour through traditional wooden warehouses, see massive cedar barrels used for fermentation, and learn about the centuries-old miso-making process.
There’s also a museum, tasting corner, and gift shop where you can try and buy a variety of miso-based products.
It’s a unique cultural experience that offers a deeper understanding of Japanese food history and craftsmanship.
