After an early-morning hotel pickup on foot, head to Toyosu market to witness the daily tuna auction. Then continue to the good sushi restaurant for breakfast.
Tokyo departure is also arrangeable.

The tuna auction is viewed from a public space on "3rd floor" through the windows. If you make a tour reservation 2 months in advance, I can make a reservation for better place to see from "2nd floor".
